Imagine this: You leave work early on a Friday afternoon, drive home with the windows open down winding country roads, then pack a weekend bag. You and your partner pick up two friends and drive an hour and half east (the midway point of your trip) and eat fantastic Mexican food. Then you drive another hour and a half farther east and end the car trip at an amazing cabin on a lake in the country. You unwind in the hot tub, have a couple drinks, then call it a night.
When you wake up Saturday morning, warm notes of cinnamon and pecans greet your nose and force you out of bed. You meander to the kitchen and find your friend's mom, Barbie, has made this amazing French Toast Casserole for you. Fluffy, flavorful, and topped with warm maple syrup— it's the perfect recipe to kick off a weekend of relaxation.
This is basically what my life looked like a few weekends ago. My friends called me up to see if we wanted to drive the three hours to east Tennessee to see the Synchronous Fireflies that live in the Great Smokey Mountains National Park. We obviously said yes, since we're the kind of people that definitely wanna see some mating lightening bugs flash their butts in harmony at one another.
So we drove out to east Tennessee and spent the weekend relaxing. We grilled food, went on a paddle boat, and spent some time site-seeing (I already blogged about the terrifying SkyFlyer ride here!). The best part is that we had this amazing weekend and didn't even end up seeing the fireflies— ha! It was such a great weekend and really solidified my desire to move out to the country and live a little slower.
Anyway, I didn't wanna post pictures of this incredible casserole without being able to share the recipe. So my friend Rachel got her mom, Barbie, to send me the recipe. Only she sent me a hand written version from who knows where and it's the cutest thing ever, no? I'm so in love with this entire breakfast experience. Make it for yourself, make it for a friend— you won't regret it.
French Toast Casserole
Cut a loaf of Texas Toast in one inch cubes. Let set out all day with just a paper towel over them. Coat a 9x13 inch casserole pan with butter (use real butter, about 2 tablespoons). Mix together:
8 slightly beaten large eggs
1 cup whipping cream or half & half
2 cups milk
1 tablespoon sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
dash of salt
Pour over bread and refrigerate overnight. Next morning, let set out one hour to come to room temperature. Top with chopped pecans and bake at 350° for one hour.

Let me know if you decide to make this dessert! I know when I do that my version will probably have less dairy (I might try coconut milk!) and use fresh local eggs in it. I might also top it with fresh cut strawberries and powdered sugar instead of pecans— yum!
Oh. My... I want your weekend, the whole thing, including the casserole. Sounds like a dream
ReplyDeletexo
it was ridiculously dreamy haha
DeleteMy husband has demanded I make this immediately, and I agree with him. It looks so delicious. Thanks for sharing.
ReplyDeleteCheers.

DeleteYour weekend sounded so surreal, almost as if it were a dream! I've had days like that too and I just love them. Glad to hear that you had fun even though you didn't get to see the light bugs.
ReplyDeleteI definetley want to try this!! I'll write down the ingredients so I can buy them the next time I go grocery shopping. Thank you for sharing!

it really did feel kind of like a dream! i can't wait to hear what you think of this recipe!
DeleteComing to your blog is dangerous when you post recipes! This looks DELICIOUS. Must learn how to be better in the kitchen and make this and/or any of your recipes ASAP.

DeleteWhoa YUM! I can hardly handle this! I need to try!!!
ReplyDeleteThis Lovely Little Day
Wait, so am I not crazy in thinking that Tennessee has a crazy amount of lightning bugs? I don't remember EVER seeing this many fireflies where I grew up. Also, I felt terrible for how cool the lightning bugs' glowing guts looked as they splattered on my windshield. Oops!
ReplyDeleteThis looks so good it hurts. I'm now eating honey bunches of oats and lying to myself, "This is what the breakfast in the pictures tastes like...no really it does, honest."
i think we do have a lot here! the ones we went to see are supposed to be super special to the east tennessee area though. because of their specific longitude/latitude, the only other place you can see them put on a show like this is in japan! maybe one day i'll go!
DeleteYou're inspiring me to make something special for breakfast next weekend. I bet the pecans gave it a wonderful crunch, mmm.
ReplyDeleteAnd THIS almost made me snort coffee up my nose: "we're the kind of people that definitely wanna see some mating lightening bugs flash their butts in harmony at one another." HA!
haha what can i say— we are a *classy* couple! also— you should totally give this a try! i love that you make it the night before so that you can have the laziest weekend possible!
DeleteThe little banner on your photo is cute enough to almost convince me that I need to learn how to use Illustrator
ReplyDeleteyou should! i only use it for the most basic + simple things. there is *so* much you can do with it that i'm almost embarrassing how little i know! but when i need to figure something out i just google it or ask nick— it's been working so far!
DeleteSounds like an amazing weekend. It's great when something is so good it doesn't matter what you expected. This casserole sounds amazing. I'm going to plan on making it when my husband gets back - so I am not alone in this. I'm definitely thinking strawberries on top, too.
ReplyDeleteyes, i totally agree!
Deletealso if it's just the two of you then it would probably be really easy to half the recipe (which is what i'll probably do!)
Wow- this sounds amazing. French toast is my absolute favorite and I like the idea of doing all the prep the night before... Sounds like a great little getaway and Barbie sounds like the best.
ReplyDeleteyes— night before prep is definitely key! it's the perfect dish for when you have guests!
DeleteThis sounds absolutely incredible. I LOVE pecans, so I'm sure I'd devour this in a heartbeat. Sounds like a wonderful thing to wake up to! :)
ReplyDeleteoh my. I'm going to have to make this. I like the thought of not having to flip anything on the stovetop, heehee. (I always flip the french toast too late, sigh!). and, I want to have a weekend like that! it sounds lovely :) I always end up spending my weekends perusing netflix, hahaha.
